Roasted garlic and horseradish mayonnaise
1 kg cooked Australian Prawns
10 garlic cloves
1 tablespoon olive oil
3 tablespoons fresh horseradish
¾ cup mayonnaise
2 teaspoons lemon juice
¼ teaspoon sea salt
Place garlic in tin foil and drizzle with olive oil. Wrap to enclose and roast for 20 minutes or until golden. Allow to cool.
Place the garlic and remaining ingredients in a small food processor and process until smooth.
Serve with fresh Australian Prawns and simply dip them in!
