Australia Day calls for Australian prawns. These tasty, super quick and easy prawn hot dogs will surely impress your Australia Day party guests. Bonus: no cooking!

Australia Day Prawn hot dogs with green slaw and golden mango mustard

 36 large, cooked tiger prawns
 4 soft white hot dog rolls, toasted
 Green chillies, thinly sliced to serve
 Potato crisps to serve
Green slaw:
 ½ bunch basil or parsley leaves
 ½ cup aioli
 ½ lime, juiced
 ¼ head green cabbage, finely shredded
Mango mustard:
 flesh from 1 ripe mango, chopped
 2 tbsp mild mustard

For the green slaw, use a stick blender to blitz the basil leaves, aioli and lime until you have a smooth mixture. Season to taste. Toss through the cabbage.

For the mango mustard, place the mango flesh in a jug with the mustard and a pinch of salt then use a stick blender to blitz until smooth.

In the toasted split buns, add some slaw then top with the prawns and mango mustard. Scatter with chillies and serve with extra cooked tiger prawns mango mustard and crisps.
