Kale and basil pesto dipping sauce

Be deliciously nutty tasting dipping sauce which compliments the Harissa Mayo and Vietnamese dipping sauce perfectly.

Kale and basil pesto prawn dipping sauce

 1 cup basil leaves
 2 cups kale leaves
 2 cups watercress sprigs
 ½ cup blanched almonds
 ¼ cup pine nuts, toasted
 1 clove garlic, crushed
 1 tbsp finely grated lemon rind
 ½ cup finely grated parmesan
 ¼ cup olive oil
 2 tbsp lemon juice
 ½ cup water
 Sea salt and cracked black pepper

Place all the ingredients into a small food processor and process to a rough paste.

Makes 2 cups.
