4thick slices sourdough bread, toaste
1butter lettuce, leaves separated and rinsed
2Lebanese cucumber, cut into ribbons
24cooked Australian prawns, peeled and deveined
Store bought pesto and baby basil to serve
To make the chilli mayonnaise:
Place the sriracha, mayonnaise and lime juice in a bowl and mix to combine.
To make the sandwich:
Spread chilli mayo generously over the toasted sourdough.
Top with lettuce, cucumber and prawns. Drizzle with pesto and sprinkle with baby basil to serve.
