Open prawn sandwich with chilli mayo, pesto and cucumber

 4 thick slices sourdough bread, toaste
 1 butter lettuce, leaves separated and rinsed
 2 Lebanese cucumber, cut into ribbons
 24 cooked Australian prawns, peeled and deveined
 Store bought pesto and baby basil to serve
Chilli Mayonnaise
 2 tbsp sriracha
 ½ cup mayonnaise
 1 tbsp lime juice
To make the chilli mayonnaise:

Place the sriracha, mayonnaise and lime juice in a bowl and mix to combine.

To make the sandwich:

Spread chilli mayo generously over the toasted sourdough.


Top with lettuce, cucumber and prawns. Drizzle with pesto and sprinkle with baby basil to serve.
