Pea and prawn fritters with labne and mint

 24 medium cooked Australian Prawns
 1 cup self raising flour
 ½ tsp baking powder
 2 eggs, lightly beaten
 1 ¼ cups buttermilk
 Sea salt & cracked black pepper
 ½ cup frozen peas, thawed
 1 tbsp finely grated lemon rind
 3 tbsp extra virgin olive oil
 ½ cup store-bought labne
 Fresh mint & lemon wedges to serve

Place the flour, baking powder, eggs and buttermilk into a bowl, season with salt and pepper, whisk until smooth.


Peel and devein prawns, halve lengthways.


Add peas, lemon and prawns, mix to combine. Heat 1 tbsp oil in a large non-stick frying pan over a medium heat.


Cook ΒΌ cup of the mixture, in batches, for 2-3 minutes each side or until golden and cooked through, adding more oil in between batches.


Serve with labne, mint and lemon wedges.
