We all love a cool dip in summer. Here's how to entertain with a simple dipping sauce while chilling with friends and Australian Prawns.

Roasted garlic and horseradish mayonnaise prawn dipping sauce

 10 garlic cloves
 1 tbsp olive oil
 3 tbsp fresh horseradish
 ¾ cup mayonnaise
 2 tsp lemon juice
 ¼ tsp sea salt

Place garlic in tin foil and drizzle with olive oil. Wrap to enclose and roast for 20 minutes or until golden. Allow to cool.


Place the garlic and remaining ingredients in a small food processor and process until smooth.

Makes 1 cup.
