Whipped Feta Dip with Lemon Pine Nuts and Parsley

Impress your guests with this super easy to make snack or entree. This recipe goes well with our Korean as well as Jalapeño Ranch dipping sauces if you have a larger group.
¼ cup ricotta
1 cup roughly crumbled feta
2 tbsp extra virgin olive oil
¼ tsp chilli flakes
½ tbsp chopped fresh dill
½ tbsp chopped fresh Italian parsley
½ tbsp finely grated lemon rind
1 tbsp roasted pine nuts roughly chopped
24 large cooked Australian Prawns
Place the ricotta, feta and olive oil in a food processor. Blend until smooth.
Spoon into a bowl drizzle with extra olive oil.
Top with dill, parsley, pine nuts, lemon zest and red pepper flakes (optional).
